Banana Bread

I used this recipe to make mini loaves for Christmas gifts!

Round up all the monkeys! This banana bread is a breakfast crowd pleaser.

Yield: 1 loaf

You will need:

  • 3 medium sized ripe bananas
  • 1 & 1/2 cup flour
  • 1/2 cup brown sugar (packed)
  • 1/3 cup butter (melted)
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 3/4 teaspoon baking powder
  • pinch of salt
  • optional: 1/2 cup chocolate chips

Directions:

  • Preheat oven to 350 degrees and grease a 9 x 5 inch bread pan
  • With a hand mixer, mash up the bananas in a large bowl
  • Add in wet ingredients and mix on low
  • Add in dry ingredients and mix on low (exclude optional chocolate chips)
  • If using chocolate chips, mix them in using a spoon or spatula
  • When the ingredients are well mixed, scrape the batter into the pan
  • Bake for 30-40 minutes. After 30 minutes, test with a toothpick in the center of the loaf until the toothpick comes out clean. Banana bread is very moist, so it is okay for there to be some residue, but the center should be set to ensure it is fully baked
  • Let cool for 10 minutes, enjoy!

Optional toppings/mix ins:

  • Chocolate chips
  • Reece’s cups
  • Nutella or peanut butter
  • Chocolate and strawberries
